The simplest recipe I use (besides making reservations) is a chicken marinade. Works great with tofu, too. Since I measure more or less by feel, you'll need to taste it as you go along. Some people like it sweeter, saltier, more garlic-y, etc.
Combine the following ingredients, making enough to cover the chicken:
- Soy or Tamari Sauce
- Honey or Molasses (@ 1 or 2 Tbsp.)
- Juice of 1 Orange
- Garlic (fresh is best, powder's OK)
- Ginger (same as garlic)
I marinate it for 1/2 hr or so, and cook the chicken in the sauce, turning once. It's great on top of rice.
